Travels to Tilburg (Again) + Single-Serve Blueberry Crumble
Saturday
Well, Arthur didn’t start Saturday off in the best mood. He woke up at 6:30 or so, and then again when his pops went downstairs a little after 7. The morning involved quite a bit of crying and screaming, and a changing incident in which Arthur kicked his diaper and sent poop flying over his pops and my yoga mat. Naturally he also managed some wiener grabbing at the same time, and then proceeded to rub it in his face. What a cutie patootie.

We had another trip to Tilburg planned, and were kind of dreading it with Arthur in this mood. I mean, he had an excuse - after the vaccinations the previous day, he had a tiny bit of a temperature, so some grumpiness was to be expected. But the car ride over went reasonably well - he fussed a bit, but it wasn’t too bad, and he slept for over an hour!
The car ride back, on the other hand, was not fun. It was nearly two hours, due to some construction on the highway, and Arthur didn’t sleep a wink. Instead, he threw multiple tantrums whenever I didn’t give him whatever I was holding at the moment, flung food all over the place, and gave me the stink-eye to indicate his displeasure with my behavior. Still, there were occasional moments of sweetness and cuteness.
We got home at 4:30, and Arthur’s mood instantly improved, which was a relief. He was honestly pretty sweet for the rest of the afternoon and evening, so I forgave him for the car ride home. And, considering he was probably suffering from post-vaccination luckiness, he was a real trooper!
Sunday
Arthur woke up a little after 7:00 on Sunday. He was pretty good-natured for the entire morning, though getting him in his high chair was a struggle. He's been resisting it more and more lately, straightening his entire body with surprising strength, and it takes quite a while to force him in there. We suspect that it might soon become a two-person job.
Ah well. It was bath day, and luckily Arthur took the hint and napped on me afterwards. It wasn't a super long nap, but I think he just about got a full sleep cycle in, so that's something! The afternoon had sweet moments and...well...challenging ones. He's doing these loud shrieks more and more frequently when he's bored or restless during walks, and that can be a bit annoying and embarrassing. He also can't really be trusted with lift-the-flap books anymore, because he keeps eating the flaps. But on the other hand, he sometimes gets all bashful when I'm giving him big smiles, squinting his eyes real tight and looking away.

But oof, Arthur grew fussier and fussier as the afternoon wore on. He wanted everything he really shouldn't have been holding, and of course when I moved these things out of his range, he started up. When his grandparents arrived a little after 6:00, Arthur was actually somewhat sweet, and took to them very quickly. No tears this time when his nagypapa approached!
However, Arthur didn't impress anyone at dinner - it involved throwing his utensils and cup on the floor and lots of very loud screeching. I think he was more than ready for bed when it was time!
With the moving business on Saturday and Miklós and his parents getting home fairly late on Sunday, I didn't do any cooking the past couple of days - instead it was ready-made meals and takeout. But I did make a single-serve blueberry crumble on Sunday, and boy was it tasty! It's barely a recipe, but a nice combination that really hits the spot when I want a pie fix! Here's how I made it:
Single-Serve Blueberry Crumble

Ingredients
Filling:
~1 cup blueberries (I used frozen, and didn't thaw them beforehand - it worked well because they stayed more intact this way!)
sprinkle cinnamon
sweetener of choice, to taste (I used about 2 tbsp granulated allulose)
sprinkle lemon zest (optional)
Crumble:
1 tbsp butter/margarine
¼ cup flour (I used oat flour)
pinch salt
splash vanilla extract (optional)
sweetener, to taste (I used 1 - 2 tsp allulose syrup)
Instructions
Make the filling by combining all the ingredients in a small oven-safe dish and tossing together.
In a seperate bowl or mug, melt the butter or margarine in the microwave.
Add the remaining crumble ingredients, mixing thoroughly.
Sprinkle the crumble over the filling.
Pop into the air fryer at 180 degrees Celsius, and bake for 10-20 minutes, until the top is golden brown and crusty.
Serve warm or eat cold later!
