Weekend + Sweet Simple Stuffed Squash

Saturday

Arthur woke up a bit after 7:00 on Saturday, or at least that’s when he woke Miklós up. This time, his pops didn’t feed him the fruit he was jonesing for, so Arthur had to make do with chickpeas, carrots, and yogurt, none of which he was terribly enthusiastic about. One of Arthur’s new tricks is to hold out his baby spoon to you when he wants you to reload it. However, he doesn’t just give it to you - oh no, he wants to play tug-of-war with you! So it’s quite a process.

I don’t think I mentioned it, but a week or so ago, I dropped another nursing session, so now we’re down to four a day, with five solid meals/snacks. So Arthur’s current daily routine looks something like this:

  • 7:00 (or whenever he gets up) - solids

  • 8:00 - susu

  • 10:00 - solids

  • 11:00 - susu (and hopefully a nap)

  • 1:00 - susu

  • 2:00 - solids galore

  • 5:00 - solids

  • 7:00 - solids

  • 7:30 - susu

Yup, he spends pretty much the whole day eating! Though he does get the odd walk in here or there, and today Miklós took him out a bit before 9:00, so Mama could have a bit of a break.

Arthur came so close to falling asleep when I nursed him at 11:00. But his nap phobia seems to have returned, and he forced himself awake. It wasn’t great. Luckily he managed to get a full sleep cycle in during his 12:00 nap with Miklós, and was in quite a good mood afterwards! He had a solid appetite for his luncheon (a trick I’ve learned with foods he’s less interested in is to eat some myself in front of him; that instantly makes them more appealing) and then he was in for a treat: an extra long afternoon walk with his dadadada!

My lovely husband had gifted me a massage as a congratulations-on-surviving-12-days-of-single-parenthood present, so I handed Arthur off to Miklós a bit before 3:00, and was off. The boys went to a shopping center quite a ways away, and just before they were about to arrive home, Arthur fell asleep. So the walk went on for a little longer, and Arthur dozed for nearly an hour. I guess he’s making up for lost time!

Back at home, Arthur got to try a new food: Yorkshire pudding! I was making some for Miklós and my dinner, and figured I might as well make a bit extra for Arthur. It’s basically another form of bread, after all, so I figured it’d be a hit. Plus, as mentioned, he likes to eat what his parents eat. Arthur was, unsurprisingly, very happy with this new delicacy, and ate quite a bit!

Despite getting so much napping In, and quite late in the day as well, Arthur went to sleep fairly readily. We certainly weren’t complaining about that! So, all in all, a very solid Saturday!

Sunday

Arthur woke us up at around 7:20 on Sunday; I think he may have been awake himself for a bit before then. His pops stuffed him full of the leftover Yorkshire pudding before shipping him off to me. Then he was off on a dreary rainy walk with Miklós, and breakfast #3!

Arthur tried two new foods over the weekend: on Saturday, he was introduced to lentil cakes. Basically rice cakes, but made with lentils, so it sneaks in a bit of protein and iron! Arthur seems to like them quite a bit, and they're a great vehicle for various sauces. I've been topping these ones with a quick "hummus" of sorts I used to get him to eat the remaining baby carrots and chickpeas he didn't want to consume, blending them up with tahini (yay, allergens), lemon juice, cumin, garlic, and olive oil. And he's very happy to eat them on a lentil cake that way. Beans on beans, yo! The other new food? Pineapple! It was canned in juice and, to nobody's great surprise, Arthur was more than happy to munch on it. You can't go wrong with sugar.

Despite having just had a bath beforehand, Arthur fought quite a bit against napping when I nursed him at 11. After 15 minutes or so, though, he finally caved, and slept for a solid hour before I finally woke him up, needing to pee and wanting to get my pilates in before Miklós went off to the climbing gym.

The boys went on a hunt for our usual Sunday vlaai, before Arthur was delivered back to me for a liquid and solid afternoon meal, followed by a video chat with Oma. He was pretty sweet and charming while we talked, playing some sort of game he made up where he laid his head sideways on the bed and then upright, smiling at her and giggling. He also put a puzzle piece in his animal puzzle, all by himself - the first time he's done so! I was very impressed.

By dinner time, though, Arthur was fading and fussy. He probably could've done with a second nap in the afternoon, but he never got the chance. Luckily, bedtime was a breeze!

Anyway, since Miklós was actually home this weekend, we had our usual sweet potato quiche on Sunday. On Saturday, I made minestrone, but forgot to take a photo, so I'll post that recipe another time. Luckily it's one I've made quite a few times, so I'm sure it'll come up in the future at some point. We (Arthur included) enjoyed it with Yorkshire puddings. So instead I'm going to post something that's barely a recipe, but a new snacking combination I discovered a while ago that I'm addicted to. I first put together this combination over the summer, but now that winter squash is coming into season, it's becoming a more frequent go-to! And look, roasted winter squash is bloody delicious in my books already; this just takes it a bit more over the top. Here's how I make it.

Sweet & Simple Stuffed Squash (serves 1 hungry person as a snack or side)

Ingredients

  • ½ winter squash, seeded (butternut, hokkaido, kabocha, etc.)

  • ~½ cup cottage cheese/Greek yogurt/cream cheese

  • a handful of chopped walnuts

  • sprinkle of cinnamon

  • honey/syrup/granulated sweetener of choice (optional - some squashes are a lot sweeter than others)

Instructions

  1. Roast your winter squash at 220 degrees Celsius for around 45 minutes, until soft and brown at the edges (or, alternatively, microwave it for 10 minutes or so).

  2. Add the cottage cheese (or other dairy alternative) to the hollow of your squash, so that it fully fills it.

  3. Scatter chopped walnuts over the filling.

  4. Sprinkle cinnamon and any sweetener if using on top.

  5. Enjoy!
