A Day in Tilburg + Road Trip Snacks

Arthur woke up a little before 8, and though he was hungry, he was also still sleepy, so even the first nursing session ended up being half a nap. We had a lot of home viewings scheduled in Tilburg today, so wanted to be on the road by 10, so I crammed in a second feeding at 9:20, during which he did another half-asleep feed. Sleeping and eating as much as possible before we left was a good start to a long day we were very apprehensive about.

But unfortunately, that was the most sleep Arthur got all day. He didn't sleep at all on the way to Tilburg, and starting fussing halfway through the hour and a half long drive. I was able to keep him placated for a bit with some parsnip purée mixed with leftover scrambled tomato eggs, but he wasn't terribly hungry, and so that only occupied him for so long. Luckily, Sonja the singing sex elephant saved the day for the remainder of the ride; I don't know how many times we listened to her peek-a-boo song, but I think we all know it by heart at this point.
Arthur was able to sleep for about 20 minutes while I walked around with him in the stroller before our first viewing, so that was something. But I think that was pretty much the last bit of sleep he got until after dinner. He didn't eat a lot either; he wasn't terribly interested in the cold formula I offered him, and nursing sessions were rushed 15-minute affairs between viewings, and he had to split them between trying to sleep and trying to sleep.

But at least Arthur was surprisingly quiet on the drive back. Alright, he did do an explosive poop, so we had fun changing him in a gas station parking lot, but he really wasn't too fussy, despite being awake the whole ride back. I had picked up a jar of sweet potato purée at an Albert Heijn in Tilburg, and spent much of the ride home slowly feeding it to him from my fingers, and that definitely helped. Arthur was pretty dazed by the end of the trip, and fell asleep less than two minutes before we arrived home.
Anyways, that brings Arthur's road trip snacks to:
parsnip purée
egg
tomato
olive oil
sweet potato purée
We got home pretty late, so dinner was takeout, but here's a non-recipe for some road trip snacks I made. I very loosely based them off the Yorkshire puddings I made earlier, but added kefir and additional toppings, to make them bagel bite thingies. They were pretty good! I think it's hard to mess these up; and quantities aren't too important, but here's how I made them:
Road Trip Bagel Egg Bites (makes 6 bites)

Ingredients
2 eggs
5-6 big spoonfuls kefir (I used homemade whole-milk)
3 big spoonfuls all-purpose flour
salt & pepper, to taste
olive oil, for cooking
toppings of choice: I topped some with sesame seeds, some with bagel seasoning, and some with vegan cashew-based Parmesan
Instructions
Preheat oven to 180 degrees Celsius.
Whisk eggs until combined.
Add in kefir, mix again, then mix in flour.
Stir in salt & pepper.
Add a generous amount of olive oil to 6 spots in a donut baking tray, making sure it covers the bottom of each spot.
Pour the batter into the donut tray, add toppings of choice, then bake in oven for 20 minutes.
