Farewell, Grands + Single-Serve Deep Dish Chocolate Chip Cookie

Saturday

Arthur was back to syncing with Mama on Saturday, waking up when he heard me in the bathroom a bit before 7:30. He had a busy morning gradually adjusting to his grandfather (the previous two days, Arthur had wailed when placed in Gyuri’s arms, but today he was content to sit on his lap, at least while other family members were nearby) and getting bathed. So, naturally, he was ready for a nap at 10:00!

After his second breakfast and first nap, Arthur was trundled off on one final walk by the river with his grandparents, so his parents could get some time to themselves. I guess the walk tired him out, because he crashed again at 1:00, despite his 10:00 nap being quite a long one.


Then Arthur had his second restaurant experience: at our neighborhood pub! Once again, Jutka fed him puffs in the stroller while the adults lunched, and he was, apparently, fairly well-behaved. So maybe there’s hope for Miklós and I to have a dinner date with him yet!


Arthur had a quick 3:00 nursing session, saw his grandparents off at the train station, and then had a nice long walk with dadadadada by the river, during which he napped yet again, for almost an hour. He’s been a very sleepy boy today!


So Arthur was theoretically well-rested for dinner, but he was still pretty fussy throughout it. Since the grandparents were gone, it was time to get seriously back on solids and allergens again, and I fed Arthur a mixture of broccoli purée, formula powder, and peanut butter. He wolfed it down, so I fed him a couple more puffs, followed by more of the puréed broccoli, this time thickened up with almond flour. Arthur ate bite after bite through his tears. He ate so much that he didn’t have a big appetite for nursing afterwards, but his mood was considerably improved, and he went to bed in pretty good spirits.


Aaaaand that brings Arthur’s Saturday solid intake to:

  • yet more puffs (made of corn flour, sunflower oil, carrot powder, & apple powder)

  • broccoli purée

  • formula powder (milk)

  • peanut butter

  • almond flour


Sunday

Arthur woke up at 6:30 on Sunday, and was not in a good mood. Miklós tried to pacify him by feeding him the rest of the broccoli purée, but Arthur was extremely impatient, and screamed when the bites weren’t delivered quickly enough. He was in a slightly better mood after some booby time, but it didn’t last terribly long, and I was very relieved when he got a very long nap in at his 10:00 nursing session.

Arthur was in a much better mood post-nap; he was, in fact, quite a little smile bug! So in high spirits, he took his parents to the Bisschopsmolen for their weekly vlaai hunt, and then took his dad to St. Petersberg so his mama could do some pilates. By the time they got back from their walk, Arthur had been awake for two full hours and was feeling it - he was quite fussy, so I was very happy when he fell asleep on me during his nursing session.


For his afternoon snack, Arthur got a new food: orzo pasta! This was a whole-wheat variety that I had cooked up to be pretty mushy, and I first fed it to him on its own. Like other plain, starchy foods, it went over well with Arthur. I then sacrificed my nose and opened up a new jar of the fish-green veggie-rice purée, mixing it up with some orzo to dilute it, and gave Arthur some of that. He seemed just as happy to chow down on that.


Since we were calling Oma during his 5:00 nursing session, Arthur didn’t get his usual late afternoon/evening nap in, and his fussy demandingness at dinner reflected this. Everyone had eggs for dinner: the adults, quiche, and Arthur, scrambled egg in sesame oil with garlic and onion powder. It was, as usual, a hit with the little dude. I have to say, I’m really happy that two of the major allergens (eggs and peanuts) are probably Arthur’s two favorite foods. Anyhoo, Arthur gobbled the entire egg down, and probably could have eaten even more. I still remember the days when he wouldn’t eat more than a couple of spoonfuls at once. How he’s grown!


So, Arthur’s Sunday involved the following solids:

  • broccoli

  • whole wheat orzo (new food!)

  • white fish

  • spinach

  • green beans

  • peas

  • parsnip

  • rice

  • egg

  • sesame oil

  • spices: garlic powder, onion powder


The adults, meanwhile, enjoyed sweet potato quiche for our own Sunday supper, and Vietnamese rice paper pizzas on Saturday. So no new dinner recipes to post, but I did try another one of Chocolate Covered Katie's recipes! This was for a single-serve vegan chocolate chip cookie. The batter ended up being a bit too liquidy for a proper cookie (maybe it's because I used the margarine option, and melted it completely instead of using peanut butter or slightly softened butter?), so I just left it in the ramekin I mixed it in and baked it like that. So it ended up being more of a skillet cookie, but was still pretty darn tasty! Here's how I made it:

Single-Serve Deep Dish Chocolate Chip Cookie (serves 1, duh)



Ingredients

  • 3 tbsp rolled oats

  • 2 tbsp oat flour

  • 1 tbsp granulated sweetener

  • 1.5 tbsp margarine, slightly softened (I fully microwaved this, and it might have been why my batter was runny. Another option she gives is to use nut butter)

  • 1.5 tbsp kefir (this might have also made it too runny. I might omit this next time)

  • 10g dark chocolate chips

  • sprinkles of cinnamon, salt, baking soda


Instructions

  1. Preheat air fryer to 160 degrees Celsius.

  2. Mix all of the ingredients in a small ramekin until fully combined.

  3. If choosing the deep dish option, leave the dough in the ramekin. If going with a more typical cookie, roll into a ball and press down on a sheet of parchment paper.

  4. Bake for 6 minutes, then remove.

  5. Devour.
