King's Day + Kefir Cups

Sunday

Arthur slept in until 7:10 on Sunday. More importantly, when he did wake up, his disposition was considerably sunnier from the previous couple of days. In fact, he seemed so cheerful that his parents even tried having special time with him on the play mat. We kept him in the room with us this time, and he lasted there for 5 minutes or so before the fussing started. I was able to calm him a bit by singing Mamma Mia! (taking multitasking to a whole new level) but it was still a somewhat harrowing experience.


After a bath and a nap, Arthur took his parents to the Bisschopsmolen for our Sunday vlaai, then extended his stroll with his papa to St. Petersberg. The two of them got back a bit later than usual, and I figured Arthur would be famished and exhausted by that point, but he seemed more dazed than anything. He drank alright, but despite being clearly tired, showed no inclination of falling asleep.


Because I wanted to have an afternoon glass of wine, I opted to swap Arthur’s usual 3:00 nursing session with an extra big solid meal around 3:00. He started off by finishing the rest of the pizza eggs. Afterwards, we tried something new: homemade puffs! I made them by following this recipe base, though I might tweak it a bit more. The ingredients I used were whole wheat flour, cauliflower-sweet potato purée, egg yolk, toasted sesame oil, onion powder, dried thyme, and dried borsikafű. I tasted one myself and it wasn’t half bad, although it didn’t dissolve as much as I would have liked, hence the upcoming tweaking. As for Arthur’s thoughts on the homemade snack? He was fine with them. They weren’t something he lusted after insatiably or anything (as he does for peanut-butter containing foods), but he did readily grab them with his hands and munch on them.

Miklós took Arthur for a short walk after his massive snack, during which he promptly fell asleep. Unfortunately, he didn’t have a lot of time to sleep on his walk, and didn’t continue his nap during his 5:00 nursing session, despite clearly being exhausted. So he was a bit restless and fussy during the evening, but I did expect worse from him. He was even civilized at dinner; while the adults enjoyed our usual special Sunday quiche, Arthur got a serving of special Sunday red rice oatmeal, followed by a couple more homemade puffs. He didn’t seem to have a huge appetite, but ate them fairly contentedly. Arthur didn’t nurse long afterwards, and Miklós put him to bed quickly. The poor guy was so exhausted he really fought going to sleep, but did eventually crash and crash hard.



Anyways, Arthur’s Sunday menu consisted of:

  • egg

  • olive oil

  • mushroom

  • tomato paste

  • nutritional yeast

  • spices: garlic powder, onion powder, oregano, basil, thyme, borsikafű

  • homemade puffs: whole wheat flour, toasted sesame oil, cauliflower purée, sweet potato purée, egg yolk

  • oatmeal

  • achiote seeds

April 27th is King’s Day in the Netherlands, and to celebrate, Arthur slept in until 7:45! It’s always nice when he syncs with Mama. He was in a pretty chill mood throughout the morning as well, which was nice, chilling on the bed with his dad (who had the day off) and practicing his crawling.


The far right side of my right boob has been pretty sore; it started in the middle of the night, and has been pretty hard. I’m hoping there are no clogs going on or anything; we’ll see how it feels as the day progresses and Arthur works on draining it.


After his second breakfast and a nap, Arthur and his parents went out to the city park to experience the annual King’s Day market held there. It was a complete zoo there, with people slowly queuing just to get across a bridge in a park, and waiting patiently just to get to various stalls. Ok, the patience was limited to the adults; Arthur started getting a bit restless after 45 minutes or so. I was wearing him in the baby carrier, as navigating the crowds with a stroller would have been a nightmare, and I think maybe he got uncomfortable in there, because when I took him out and held him facing me, he was fine.


We bought a couple of wooden toys for Arthur, then took his grumpy butt home for another nursing session and a nice long nap. Afterwards, it was time for some solids! I gave Arthur a few more of the homemade puffs, although that’s maybe not the right word for them; they’re more like soft dog biscuits (yum, yum!) To get some allergens and iron in, I then opted to give him a bit of formula powder mixed with apple-peach-sweet potato purée and almond flour. I wasn’t surprised that Arthur liked the combination. Like, a lot. Afterwards, he had more fun with his plastic shot glass. Since he wasn’t really swallowing the water in there, I tried putting some of the fruit purée in instead, and he readily swallowed that down!


After such a feast, it wasn’t a surprise that Arthur didn’t have a terribly large appetite for his next nursing session. Or the following one, to be perfectly honest. Nor did he nap during it, which was unfortunate. So he was pretty tired at dinner time, which for him consisted of red oatmeal. Arthur was fairly fussy while he ate, but did eat a decent amount of it.


Which meant Arthur spent a decent chunk of King's Day eating:

  • homemade puffs: whole wheat flour, toasted sesame oil, cauliflower purée, sweet potato purée, egg yolk

  • spices: onion powder, thyme, borsikafű

  • oatmeal

  • achiote seeds

  • olive oil

  • formula (milk powder)

  • apple purée

  • peach purée

  • sweet potato purée

I didn't cook on Sunday or Monday, but I do want to post a "recipe" of sorts that I've really been enjoying lately. We have an overabundance of kefir again, and I'm trying to help Miklós go through it. My new favorite way of eating it is to make kefir "cheesecake" cups - basically no-bake frozen bites using kefir as the base. It's more of an outline than anything, as I mix it up a bit each time I prepare them, but they always turn out good! Here's how I make them:

Kefir "Cheesecake" Cups (makes 4 cups)



Ingredients

  • Base/Crust:

    • 4 tbsp of any of the following, or a combination: almond flour, oat flour, ground flax, protein powder, shredded coconut, etc. (I think almond flour is my favorite here, or a combination)

    • 4 tbsp syrup/honey/other sticky sweetener

    • a sprinkle of salt

    • optionally vanilla extract

  • Filling:

    • ⅓ cup kefir (I'm sure yogurt would also work great here)

    • 2 tbsp cocoa powder (for a non-chocolate base, 1 tbsp coconut flour would probably be a good swap)

    • 2 tbsp granulated sweetener

    • a sprinkle of salt

    • optionally flavor additions/mix-ins of choice, e.g. instant coffee, spices, extracts, chopped nuts, chocolate chips, etc.


Instructions

  1. Mix the ingredients for the base together in a small bowl or mug.

  2. Divide the mixture into four silicon muffin liners and freeze for at least an hour.

  3. Mix the filling ingredients, again in a small bowl or mug.

  4. Remove the bases from the freezer and top with the filling.

  5. Freeze for at least another couple of hours before eating.

  6. Depending on the consistency, you can leave them straight out of the freezer, or let them thaw for 5-10 minutes before snacking on them.
