No News + Smashed Sweet Potato Pizzas

A 7am wakeup for Arthur today. By the time he got to my boob at 8, the little guy was ready to go back to sleep again, so that’s what he promptly did. Of course, he’s a good multitasker, so he also had a massive nursing session.

Afterwards, he had fun high-fiving Mama, one of his new favorite activities, and hanging out on the mat downstairs with CC. Arthur did a bit more crawling practice, first with Mama and then with Papa, and actually moved forward a tiny bit on his own! Of course, he immediately face-planted when he did that, but still, I think he’ll be crawling very soon.
Surprisingly enough, Arthur took another nap during his 10:00 nursing session, and then again during the 1:00 one (this one stretched my bladder to its limits), both of which I was very happy about. I guess he’s making up for yesterday. I prepped Arthur some split peas during his snack time, and to give him something to tide him over until they were done, I pulled out the Weetabix-kefir-soy milk mix from earlier. I drizzled in a bit of walnut oil and cinnamon to mix things up (literally) and include another allergen. It took him a while to get going, but once he did, the boy was hungry. I guess it’s not a surprise; he had spent the last nursing session doing much more sleeping than eating.
After wolfing down the rest of the Weetabix mixture, Arthur had some fun practicing drinking water from a cup. It’s funny; he really enjoys sucking on these little cups (and playing with them)! I think it’s connected to how fascinated he is with everything I drink, and his obsession with my water bottle.
Arthur wasn’t terribly hungry at either nursing session after his massive afternoon snack. He also didn’t nap during either, nor during his walk in between. So I was worried about what he’d be like at dinner. His own was pretty simple: lemon juice-marinated avocado. It’s fairly low-mess, and a favorite of Arthur’s! However, at this point, he was getting really worked up - I think he was tired and overly hungry from not really drinking or sleeping during the previous two nursing sessions. So he pretty much threw a fit at dinner. He did eventually eat his avocado, but it was definitely a struggle.
So, today, Arthur ate:
Weetabix
soy milk
kefir
walnut oil
cinnamon
avocado
lemon juice
Our own dinner tonight was something new: smashed sweet potato pizzas! I’d seen various versions of these floating around online, and they sounded awesome. Inspired by this BBQ version I saw on Instagram, I made some for Miklós and I. It’s been ages since I had BBQ pizza, and I figured this sweet potato version would go over well with me, though Miklós might be a bit hesitant. But actually, we both loved them! They were also a nice comforting food during a time of uncertainty - we still haven’t heard anything back from the house we bid on yesterday morning. Anyways, here’s how I made them:
BBQ Smashed Sweet Potato Pizzas (serves 2)
Ingredients
2 medium sweet potatoes
160g vegan chicken (you could use real chicken, but there’s a vegetarian in this household)
1 red onion, sliced thinly
250g mozzarella, drained weight, cut or shredded into small pieces (I used light mozzarella for my hubby’s cholesterol’s sake)
BBQ sauce, to taste (I probably used a little under a cup)

Instructions
Preheat oven to 200 degrees Celsius.
Soften sweet potatoes by poking holes in them with a fork, then microwaving them for 6-8 minutes.
Cut the soft sweet potatoes in half, giving you four halves.
On a parchment-lined baking sheet, lay the sweet potato halves skin down.
Use a smaller sheet of parchment to top the halves one at a time, and smash them with something heavy (I used a small skillet), until they are maybe half a centimeter thick and in roughly an oval sheet.
Peel off the parchment and top the halves with a little salt.
Place the sweet potatoes in the oven for 10-15 minutes, or until the tops begin to crisp.
Top them with BBQ sauce, cheese, vegan chicken, and onion.
Return to the oven for 10-15 more minutes, or until cheese is bubbly.
Let the pizzas rest for a few minutes before transferring to plates using a spatula.
