Sleep Therapy + Leek Tarte Tatine

Arthur slept in until 7:15 today! Well, according to Miklós, he woke up at 6:00 and fussed for a minute or two but went right back to sleep. But since this second wakeup was so reasonable, I went in and nursed him. Oof, my nipples are sore right now, especially the right one. For some reason, they'll go through rough phases - I think Arthur is really tugging or gnawing at them right now or something.

It was a bit of a busy day; we had an appointment with a sleep therapist in Valkenburg at 11:30 to discuss Arthur's napping issues. So right after his second breakfast, we packed Arthur up and took him on a train for the first time! He was pretty cheerful in the stroller on the train, which made sense on the way there - it was right after he had napped and eaten - but was more pleasantly surprising going home, at which point he must have been tired and hungry. As for the appointment itself, well, it was appoint-less. Basically the sleep therapist said that as long as he's sleeping enough total hours in a day, and it seems like he is, then everything is fine. So we'll give up on crib naps for the time being, and just let him nap on me and in the stroller for the time being.


I had just enough time to give Arthur some milk and a bit more contact napping on me when we got home before I had to run off to a doctor's appointment to try to schedule a general blood test. I left Arthur with Miklós, and while it meant I wasn't there for our usual afternoon snack, Miklós filled in the gap and gave Arthur more of the scrambled egg from yesterday. Apparently. he was pretty happy to eat what his papa gave him. At dinner, I opted for making some rice porridge, to use up some of the breast milk I had pumped the night before, and to get some iron in. He still loves the stuff, and kept grunting for more!


So, today, Arthur ate:

  • egg

  • sesame oil

  • garlic powder

  • turmeric powder

  • rice porridge

  • milk powder


The adults had something new for dinner! I had really liked the pumpkin tarte tatine that I had made a few weeks ago that I wanted to try another tarte tatine recipe from the same website. Leeks were on sale this week, so I opted for this one. I changed it a bit, using the same crust from the pumpkin tart (swapping kefir for yogurt because that’s what we had on hand), reducing the quantities in the filling (other than the cheese, of course, but I used a light cheese), and swapping hemp hearts for nuts. It was maybe my first time eating leeks, and really tasty! Here’s how I made it:

Leek Tarte Tatine (serves 2)


Ingredients

  • 4 large leeks

  • ½ tbsp olive oil

  • 2 tbsp syrup/honey

  • salt, to taste

  • 150g light white cheese, cut into small pieces

  • 2 tbsp hemp hearts


  • Crust:

    • 150g whole wheat spelt flour

    • 130g homemade whole-milk yogurt

    • Salt, to taste



Instructions

  1. Prepare the pastry dough by mixing the three ingredients.

  2. Roll dough thinly onto a floured surface.

  3. Preheat oven to 180 degrees Celsius.

  4. Slice the leeks into 2cm thick pieces.

  5. Spread the oil and syrup evenly on the bottom of a tart tin. Place the leek pieces on top, making sure they are tightly packed.

  6. Add ⅔ of the cheese over the leeks.

  7. Cover everything with the pastry dough, sealing around the edges.

  8. Poke a small hole in the center of the crust (for venting), and prick the remaining pastry with a fork.

  9. Bake for 40 minutes.

  10. Remove, and wait 5 minutes before removing the tart from the mold by covering the tart dish with a plate or cutting board, and carefully and quickly flipping it over.

  11. If the leeks are not caramelized enough, place in the oven, with the leek side up in the top of the oven, and bake for another 5-10 minutes (I didn't do this, but I think it would have been better if I had).

  12. Sprinkle with a bit of salt, the rest of the cheese and hemp hearts, and enjoy warm!
