Spinach + A Single-Serve Blueberry "Scone"

Wednesday

It was a sync-with-Mama kind of morning for Arthur, so he slept in until 7:45 or so, which was nice. We had a nice morning dancing, practicing crawling (which, for Arthur, mostly resulted in him carefully lowering his head and flipping onto his back after a minute or two), and preparing spinach purée for Arthur. It was bath day, but Arthur resisted his usual 10:00 nap for quite a while, before finally crashing after I covered him with a blanket.


Arthur didn’t take his usual nap during his 1:00 nursing session. Perhaps that’s why he was a bit restless during his solid snack afterwards. I had mashed together some spinach purée with kidney beans, seasoned with a bit of garlic powder. Theoretically, he should have loved it, but he didn’t seem terribly interested, and fussed quite a bit while I was trying to feed him. His response made a bit more sense when he promptly fell asleep during his 3:00 nursing session. Which, naturally, meant he was restless again during the 5:00 one.


His hands are getting pretty strong, on that note. He was scratching and squeezing my arm, and it hurt. Even not counting the nails I need to trim, his finger muscles were able to do quite a bit of damage on their own.

Anyways, Arthur’s dinner was the same as his lunch, though I opted to go without the garlic powder this time; his breath still smelled of it from his previous meal. He seemed more enthusiastic about the food itself this time around, although his temper was once again running short; he was a bit of a fussnugget and kept sticking out his stomach and clasping his hands across it as though to say it needed more filling. I tried to oblige the best I could, but it can be hard to keep up with him while eating your own dinner.


So, Arthur’s Wednesday solids were:

  • kidney beans

  • spinach purée

  • garlic powder


Thursday

Arthur woke up early - around 6:45 - and in a rotten mood, according to his dadadadada. Miklós fed him some puffs in an attempt to pacify him, but he was still pretty hungry by the time he got to my boob. Luckily, he was in a better mood after his first breakfast, and was content to spend the morning dancing, reading, and playing with my necklace - the thing fascinates him.


After Arthur’s second breakfast and a nap, he helped Mama run some grocery store errands, and Papa some pet shop ones. Unfortunately, he was really restless during his 1:00 nursing session. Sleep was clearly not an option, and he didn’t even nurse well, emitting high-pitched shrieks every minute or two on each boob, so I was switching him back and forth like crazy. He had been a bit switchy-switchy during his 10:00 feeding, but at least then he catnapped on each side.


So I wasn’t exactly looking forward to Arthur’s solid afternoon snack. But honestly, it went pretty well! We started off with some plain, raw tofu, which I sliced into long strips again. Arthur chowed down on it, and honestly, he did quite a bit better eating it than the last time I fed him tofu. There was no gagging involved, and much less spillage as well. He’s learning! I mixed up the little bits that did crumble out with some more spinach purée, and he was happy to eat that as well. As he neared the end of that portion, I mixed in some tomato paste for the vitamin C, and that didn’t seem to impact his enjoyment of the purée. He was still clamoring for more afterwards, so I warmed up some peanut butter and mixed it with yet more spinach, and Arthur was a happy camper. We called snack time quits there, and brought him upstairs for another nursing session, one which he, blessedly, fell asleep during.

After a nice long nap, a walk with his pops, and another nursing session, Arthur was in a decent mood for his solid dinner. I opted to give him the rest of the kidney beans, mixed with some more tomato paste for the vitamin C. It’s not nearly as messy as the spinach, and he seemed to enjoy it! There wasn’t much of that left, though, so I gave him several tofu slices afterwards, which he happily chomped down. He was, however, shrieking and restless during his final booby dinner, so I was more than happy when Miklós put him to bed.


Arthur's Thursday menu was thus as follows:

  • puffs (made of corn flour, sunflower oil, dried carrot, and dried apple)

  • tofu

  • spinach purée

  • tomato paste

  • peanut butter

  • kidney beans


I did cook exciting new dinner recipes for the parents on both Wednesday and Thursday, but that's not what I'm posting today. Because I also made a simple blueberry scone/muffin thing as an evening snack for myself, and it was really good! There's been a super easy Greek yogurt all purpose dough recipe floating all over the internet these days, so I just made a sweet version with some blueberries added in, because my favorite way to eat blueberries is in baked goods. Blueberry desserts are about as good as it gets. And this was no exception! Here's how I made it:

Single-Serve Blueberry Scone-Muffin-Roll


Ingredients

  • ¼ cup oat flour or probably white/whole wheat/spelt flour would all work, too (30g)

  • 2 tbsp Greek yogurt (30g)

  • ½ tsp baking powder

  • sprinkle salt

  • a little bit of sweetener or to taste (I used 2 squirts liquid sucralose)

  • a handful blueberries (mine were frozen)





Instructions

  1. Mix all of the dry ingredients in a small bowl or ramekin.

  2. Add in the yogurt and sweetener and mix with a fork until combined.

  3. Fold in the blueberries.

  4. Roll into a ball and place on a piece of parchment paper.

  5. Air fry at 170 degrees Celsius for 12-15 minutes (I cooked mine for 15, and didn't preheat the air fryer beforehand).

  6. Enjoy!
