Waiting It Out With Vietnamese Rice Paper Pizzas

Today was a stressful day. We spent basically the whole day on tenterhooks and, in my case, feeling nauseous with anxiety, waiting to hear back from the real estate agent. The owner of the house we had bid on was torn between us and one other couple, he said, but would choose today. We pretty much waited the whole day until the realtor contacted us just before 6:00pm. And unfortunately the owners of the place chose the other couple; they had bid slightly lower than us, but wanted to move there to be close to their mother, and the owners connected to that reason. Which totally makes sense, and makes me feel like our first impressions about the owners was correct; they were good people who valued family. And I know we'll find the place that's right for us eventually.
Anyways, Arthur woke up around 8:00 today. So a very reasonable wakeup time, thank goodness - I had slept little enough as it was. That being said, his sleep for the rest of the day left a lot to be desired. He didn't sleep during his 10:00 nursing session like he usually does, and when I went to the store with him in the sling, didn't fall asleep until ten minutes before I got home. Miklós felt like nap time was especially difficult today; so we're tabling it until we can see about a sleep therapist. Instead, Miklós will use the time to take another walk with Arthur, and hope that he sleeps then.
Arthur was pretty hiccupy during his afternoon snack, so he didn't eat a lot. We started out with some tomato guts, which he actually seemed to like quite a bit, so that was nice! We followed that up with some homemade whole-milk kefir, which he continued to make faces while consuming. But he did eat it. But that was it for snack time.
Arthur's also getting better and better at sitting, and Miklós showed off how he can sit on his own for longer and longer periods of time before tipping over. Today, he tipped over from sitting (after like a full minute!) onto his belly, and started moving his legs in a crawling motion. Arthur's legs are quite a bit stronger than his arms, and he struggled with that part, but the bottom half was definitely doing the movements, and he was able to scootch forward a bit on his belly that way. He was able to get on his side that way as well, and seemed pretty motivated to try and flip onto his back from there. He still struggles with the arm part, but came pretty close! And was super smiley and proud when I helped him to achieve his goal. Later, he managed to flip again by grabbing Miklós's hand, and then flipped from belly to back on his own!

I also feel like Arthur has a habit of being extra messy after a bath. After his morning bath today, Arthur leaked through his fresh clean outfit with a massive pee. Then he was especially messy during snack time and spit up on his second clean outfit. In the afternoon, he decided to have one of his biggest poops yet, which I'm honestly amazed didn't leak through onto outfit even more than it did. So it was yet another outfit.
Arthur ate at the dinner table with us again. He was pretty hungry, and wolfed down the carrots and watered-down peanut butter I gave him. But then didn't have much of an appetite for his booby dinner.
So, Arthur had the following solids today:
raw tomato innards
homemade whole-milk kefir
mashed carrots
peanut butter
Dinner for the adults tonight was one of our favorites: Vietnamese rice paper pizzas! I discovered these a few months ago, and they've been on the regular dinner rotation ever since; they are super easy and tasty, and pretty different! I generally serve two pizzas per person with a side of some stir-fried veggies to get some vitamins in.
Vietnamese Rice Paper Pizzas (serves 2)

Ingredients
4 rice paper sheets
4 eggs
2 green onions, chopped
~ 4 tbsp sweet chili sauce, or to taste
~ 4 tbsp mayo of choice, or to taste (I usually use a sesame mayo)
protein of choice, for topping (I usually use either a 140g pack of vegan bacon or ½ cup edamame, spread out over the 4 wraps, but other options are canned/fresh fish, ham, chicken, pork floss, real bacon, etc.)
Instructions
Heat an un-greased pan (I usually have two going at the same time) over medium heat.
Add a rice paper sheet to the pan.
Whisk an egg and put it in the center of the sheet.
Top with a small handful each of sliced green onions and your protein of choice.
When the egg appears cooked, drizzle over ~ 1 tbsp each of sweet chili sauce and mayo.
Remove from heat and serve. I generally fold them in half before eating.
Repeat for the other 3 "pizzas."
