Chill Dude + Carrot Tofu Pasta
Monday
I was very impressed with Arthur on Monday morning - he slept in until nearly 8! And even then, I think it may have been my venturing into the bathroom that actually woke him up. I guess he really was tired last night!
We had a productive morning shopping and eating - Arthur tasted cucumber multiple times and wasn’t a fan, although coating slices in cashew butter helped! No nap when I nursed him at 11:00, though for a minute he seemed close to it. Then again, given his late start to the day, I wasn’t really expecting him to. Still, he was in a remarkably sweet and chill mood for the next hour or so, though he started fading during his midday walk with Miklós. But though he may have been fading, he wasn’t sleeping. So as soon as he was stuck on my boob afterwards, Arthur crashed, and slept for a good solid sleep cycle, so I couldn’t really complain.

The little guy was an angelcakes throughout the afternoon, happily playing upstairs (his new favorite game is a sort of “Monsters” where he creeps to a corner of the room and giggles in apprehension, waiting for Mama or Papa to pounce on him), reading, snacking, and going on neighborhood patrol in his little bike from Oma. We spent some time on the grass outside, which Arthur was a bit unsure about at first, but then decided it was another exciting thing to put in his mouth!
By dinnertime, however, Arthur was starting to get a bit fussy and tired, and threw most of his food on the ground. I guess sushi is not going to be his favorite. Still, I was able to get him to eat some spoonfuls of his hummus, so I guess that was something! Then it was a much-needed bedtime for Arthur Newt, with his parents settling in for sweet dreams of another 8:00 wakeup….
Tuesday

Well, Arthur did not sleep in until 8:00, but he did sleep until 7:20! And even then, it was likely Miklós attempting to tiptoe down the stairs that woke him. I would describe his mood as pretty easygoing for most of the morning, something I think was abetted by his almost instantly crashing when I nursed him at 11, and taking a nice, hour-long nap. Great job, Arthur!
His good mood lasted throughout the afternoon, up until some time after 3:00, when he definitely started getting the tired fusses. But did he nap during his 4:00 walk with his pops (his last for a week)? No, no he did not. Not good job, Arthur. Still, he was in a bit of a better mood after returning from his walk, and had a nice final evening with his pops (well, for a bit under a week) before Miklós was off to Hungary the next day.
Anyways, Miklós and I tried yet another new pasta dish on Tuesday! I mostly followed this recipe, with a couple of minor tweaks. And honestly, I thought it was lovely - sweet and savory, hearty and comforting! It was a nice cozy dinner for Miklós's last night here for a week. Here's how I made it:
Tofu Carrot Pasta (serves 2)

Ingredients
250g pasta (I used whole-wheat)
olive oil, for cooking
1 large or 2 small onions, diced
200-300g carrots, diced (I used baby carrots)
1 cup vegetable broth (I used ½ bouillon cube mixed with 1 cup boiling water)
1 block of silken tofu, drained (mine was 280g)
2 heaping tsp minced garlic
salt and pepper, to taste
½ teaspoon thyme
½ teaspoon rosemary
2 tbsp lemon juice
¼ cup nutritional yeast
¼ teaspoon of red pepper flakes or to taste (optional)
MSG, to taste (optional)
Instructions
Heat the oil in a large pot, then add the onion.
Sauté the onion for 5 minutes or so, until it starts to brown.
Add the carrots and cook for another 2 minutes.
Pour in the broth and bring to a boil.
Cover with a lid, turn down the heat, and simmer for 15 minutes or so, until the carrots are soft.
Let the mixture cool down a bit, then pour it into a blender (alternatively you can use an immersion blender and blend it right in the pot!)
Add the tofu and the rest of the ingredients, blending until smooth.
Taste and add additional seasonings as wanted.
Cook pasta according to instructions. Drain.
Add pasta and sauce to the pot and cook on low heat until warm.
