Papa Comes Home! + Single-Serve Banana Oatmeal Cookie
Arthur woke up at 6:40 on Friday. Ugh. Perhaps he would've gone back to sleep if I had let him cry a bit longer (he was only sitting up in his crib rather than full-on standing like he usually is) but I couldn't deal with hearing it, so it was an early start for us both. Ah well, it makes me extra glad Miklós is coming back tonight and I can sleep in a bit tomorrow. The explosive poop he did in his sleep sack as soon as he finished nursing also made me pretty happy Papa is coming home today.

Still, Arthur was fairly chill after his first two breakfasts, and even let me leave him in his room for a couple of minutes without fussing! But as the morning wore on, he grew more and more exhausted, yawning, rubbing his eyes, the works. His eyelids were heavy and drooping as well, but of course the little bug didn't let himself nap when I nursed him at 11. In the stroller an hour later, however, he once again caved about 5 minutes in and drifted off. This time, however, he only napped a bit over half an hour before he woke up, despite probably needing sleep today more than any day. I was really hoping he might fall back asleep on me when I nursed him right afterwards, but of course he didn't. And boy was he fussy afterwards. It was clearly going to be a real grand finale of a day to our one-on-one time together.
After lunch (current trick to get Arthur to eat anything he's not interested in: smother it in peanut butter), Arthur was surprisingly easygoing, and I had the most reasonable shower experience I've had in a while. Afterwards, he got a huge kick out of me putting a plastic cup on his head again and again and, as with everything Arthur likes to do, again. But he really seemed to be trying to balance it on there! Yesterday, the game of the day was my putting plush rings on his arms (repeatedly, of course).

As the evening wore on, Arthur grew more and more exhausted and nearing the end of his rope, so he was in a great mood when his pops arrived home a little after 6. Arthur's reaction to seeing his dad for the first time in 12 days? He seemed a little befuddled and unsure. He kind of just looked at Miklós with wide eyes for a while, then decided he was ready to start trying to grab his glasses again. It seemed like things were more or less back to normal.
Let's celebrate our family reunion with a banana cookie! I pretty much just halved this recipe for this one. It was quite nice; the texture wasn't really cookie-ish to me, though I don't know what I'd call it. In retrospect, I think that's because this was quite a low-fat recipe, so it just didn't have that richness that your typical cookie has. It was a bit more of a chewy biscuit than anything. Still, I liked it, and there's a good chance it'll be a repeat recipe! Here's how I made it:
Single-Serve Banana Oatmeal Air Fryer Cookie

Ingredients
6 heaping tbsp oat flour
½ ripe banana (I air fried mine at 175 degrees Celsius for 15ish minutes until the peel was black
2 tbsp milk (I used protein soy)
1 tbsp syrup
1 tsp cinnamon
½ tsp vanilla extract
chocolate chips, to taste (I used white chocolate, but I think walnuts would've been better here!)
Instructions
Preheat the air fryer to 175 degrees Celsius for 5 minutes or so.
Mash the banana really well in a small bowl.
Add all the other ingredients and mix until combined.
Roll batter into a ball, then flatten on a piece of parchment paper.
Add parchment paper with cookie to the air fryer and air fry for 7-10 minutes, until the cookie is golden brown with crispy edges.
Let cool on a wire rack then chow down!
